Cottage Cheese Edible Cookie Dough

A no-bake, high-protein cookie dough made from blended cottage cheese, oat flour, protein powder and dark chocolate chips.

Ingredients

  • 454g (1 lb) 0% cottage cheese
  • 60ml (1/4 cup) zero-sugar maple syrup
  • 2 tsp vanilla extract
  • 150g (about 1 1/2 cups) oat flour
  • 60g (1/2 cup) protein powder
  • 170g (1 cup) dark chocolate chips

Instructions

  1. Blend the cottage cheese, maple syrup and vanilla until completely smooth.
  2. Transfer to a bowl and mix in the oat flour and protein powder.
  3. Let it sit for 5 minutes so the oat flour absorbs some of the liquid, then check the texture. If it’s too soft, mix in more oat flour a spoonful at a time.
  4. Fold in the chocolate chips.
  5. Refrigerate until cold before eating.

Notes

  • The original uses 224g (2 cups) almond flour. Oat flour absorbs more moisture, so this uses less; add more until it feels like cookie dough.
  • Oat flour is safe to eat raw since oats are heat-treated during processing. To be extra cautious, toast it in a dry pan for a few minutes and let it cool first.
  • Keeps in the fridge for up to 4 days.
