DIY Built Puff Protein Bars
Homemade marshmallow-style protein bars made with gelatin and whey, coated in chocolate.

Ingredients
- 2 cups fat-free Fairlife milk
- 5 tbsp gelatin
- 3-4 servings coconut cream whey protein (whey concentrate or isolate)
- chocolate (Lily’s for a low-sugar option)
- 1-2 tbsp coconut oil
Instructions
- Pour the milk into a saucepan and sprinkle the gelatin over the top in a thin layer.
- Mix slightly and let the gelatin bloom until it turns into a thick goo, about 10 minutes.
- Place over low heat and stir until it runs thin.
- Transfer to a mixing bowl and let sit for 5 minutes to cool slightly.
- Add the protein and whisk until the mixture doubles or triples in volume. This can take a while; don’t let it get cold, or it will start to harden and be harder to transfer.
- Pour into a parchment-lined pan and let harden for at least 2 hours.
- Cut into shapes and coat in a melted chocolate and coconut oil mixture.
Notes
- The coconut oil thins the chocolate so it makes a thinner shell over the marshmallow.
