Peanut Butter Banana Protein Cookies

Ingredients
- 1 small ripe banana
- 1/2 cup PB2 powdered peanut butter, mixed with 1/4 cup water
- 1/2 cup vanilla protein powder
- Chocolate chips, to top (optional)
- Sea salt, to top (optional)
Instructions
- Preheat the oven to 350F and line a baking sheet with parchment.
- Stir the PB2 and water together into a smooth paste.
- Mash the banana, then fold in the PB2 paste and protein powder.
- Let the dough sit for a minute or two, then mix again; the protein will thicken it slightly.
- Scoop 6 cookies onto the baking sheet. The dough will be sticky, so form circles as best you can.
- Top with chocolate chips, if using.
- Press each cookie down lightly with a fork to form discs.
- Bake for 10-12 minutes, until the edges are golden and the center is no longer wet.
- Sprinkle with sea salt and let cool on the sheet for 5 minutes before moving to a cooling rack.
Notes
- PB2 is mixed at its label ratio (2 tbsp powder to 1 tbsp water); add a splash more water if the dough is too stiff.
- Best eaten right away; they soften after being stored.
