Ingredients
- 1/2 cup Greek yogurt
- 1/2 cup roasted red peppers (jarred), drained
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1 tsp olive oil
- 1 tbsp lemon juice
- 1 tbsp water
- Pinch of salt
Instructions
- Drain the roasted red peppers and pat them dry.
- Blend the peppers, paprika, garlic powder, olive oil, lemon juice and salt until smooth.
- Add the yogurt and blend briefly, just until combined.
- Add the water if needed to loosen it, then taste and adjust the salt.
Pairs well with
- Grilled chicken and grain bowls
- A spread for wraps, sandwiches and pitas
- Warmed gently and tossed with pasta and chicken (don’t boil, or the yogurt will split)
- A dip for raw vegetables or pita chips
