Loaded Sweet Potato with Chicken

Ingredients
- 1 medium sweet potato
- 11 oz boneless skinless chicken thighs (about 2 large)
- Avocado oil
- Cusos seasoning, or your favorite all-purpose seasoning
- 4 tbsp nonfat plain Greek yogurt
- 4 tbsp cilantro lime sauce
- 3 tbsp queso fresco, crumbled
- 2 tbsp sugar-free pickled red onions
- Jalapeño, sliced
Instructions
- Poke holes all over the sweet potato, wrap it in a wet paper towel and microwave for 8 minutes.
- Coat the potato in avocado oil and seasoning, then air fry at 400F for 10-15 minutes, until the skin is crisp.
- Coat the chicken thighs in avocado oil and seasoning, then air fry at 400F for 20 minutes, until cooked through.
- Slice the chicken.
- Split the sweet potato in half and top each half with the Greek yogurt, chicken, cilantro lime sauce, queso fresco, pickled onions and jalapeño.
Notes
- The source spells the seasoning “cusos”; any all-purpose or taco-style blend works.
- For the cilantro lime sauce, the Jalapeño Lime Yogurt Sauce is a good match.
- If your air fryer fits both, cook the chicken and potato together to save time.
